This Mexican layer dip is da bomb! It’s like a Mexican fiesta in your mouth, and everyone’s invited! Creamy and tasty, perfect with your favourite corn chips, this dip is super easy to make and it’s huge! Will easily feed a crowd, perfect for pre dinner nibbles or as the meal itself! Enjoy!
1 can refried beans
300ml sour cream
1 sachet taco seasoning mix
250g Philadelphia cream cheese
2 tsp lemon juice
60g tasty cheese, grated
2 spring onions, chopped (or fresh parsley)
1 tomato, chopped
Corn chips, to serve
1. Using a large casserole dish (lasagna size) spread a layer of the refried beans.
2. Mix sour cream and seasoning mix together and spread across the refried bean layer.
3. Place the cream cheese, avocado and lemon juice in a separate bowl and blend until combined. Spread over the sour cream layer.
4. Top the avocado mixture with the grated cheese, spring onions (or fresh parsley) and chopped tomato.
Serve with corn chips – we love Mission white corn tortilla strips! Yum! Enjoy!
