MAMA LOVES – COLES KALE COLSLAW SALAD KIT
Yep, I am one of those people who jumped on the kale train when it stopped here in 2015 and I’m not ashamed to admit I haven’t gotten off!
This super green is packed with nutrition and is one of the world’s healthiest foods providing nutrients to support healthy skin, hair and bones, as well as healthy digestion (so good for constipation – I’m always talking about poo!) and a reduced risk of heart disease.
Other health benefits of kale include improving blood glucose control in diabetics, lowering the risk of cancer, lowering blood pressure and lowering the risk of developing asthma.
So, when it became a well-known fact that kale was a superfood and those who eat it would live forever and ever and ever (apparently), I went and got me some from the supermarket. I had no idea what the hell it was or what I was looking for, so much so, I had to ask the check-out-chick what it looked like (I could have Googled it of course but I find it easier to annoy someone in the know).
Anyway I bought it and I’ve never looked back. And for about six months I think I ate the damn green stuff simply just fried with butter and in no other form. I’ve since advanced to a kale queen and I put it with eggs, in Bolognese sauce, in lasagna, in casseroles, as baked chips and in salads.
Speaking of salads… I recently found this little bag of goodness in the fruit and veg section at Coles and I was super excited!
Therefore the Kale Coleslaw Salad Kit is this week’s Mama Love! It’s shredded vegetables such as carrot, cabbage and beetroot mixed with shredded kale! What a perfect little side to go with my dinners and lunches at work (the kids weren’t too excited about it but who cares, it’s not all about them ALL the time, is it?).
It also comes with a little packet of yoghurt and chia dressing and a packet of sunflower and pumpkin seeds to mix through. Delish!
It’s approx $6 a packet and I find I can get about four meals (sides) out of the one packet so it’s worth it in my little book of health.
