CORN FRITTERS – Just four ingredients and ready within minutes, corn fritters are a big winner in the Mama loves to share households! We serve them with roast chicken & salad or as a quick kids dinner/breakfast with a side of baked beans.
They also make perfect party food served on a platter with a bowl of tzatziki to dip into. Best thing is you can load them with veggies and because they are crispy, cheesey and yummy the kids won’t complain!
INGREDIENTS (makes 6-7 large or 10-12 small)
1 x tin corn kernels (around 300g drained)
2 x eggs, lightly whisked
1/2 cup self raising flour (I used wholemeal)
1/3 cup grated cheese
S&P to taste
Optional – grated carrot/grated zucchini/a handful of chopped spring onions – I nearly always include grated carrot, I’ve also been known to add some crumbled feta and bacon.
1. Place all ingredients into a large bowl and mix until combined.
2. Heat a teaspoon of margarine (I find this works better than oil but feel free to use oil) in a electric fry pan (or stove fry pan) on medium heat.
3. Using an ice cream scoop, scoop mixture into the pan (around 1 large tablespoons worth for each fritter) cook for around 3 minutes on one side then flip using a spatula to cook the other side. They are done once they start to become firm & turn golden brown.
4. Serve and enjoy!
