CHILLI BEEF AND BEAN TWO WAYS

Week night meals can be an absolute headache! School drop off, house work, emails, school pick up, rush to milo cricket, finally get home and…. eeek! No dinner! There’s nothing in the fridge! We’ve all been there right? Well thanks to Marathon Foods new Chef Direct range you can keep dinner in the pantry (yes, pantry!) and have something on hand to quickly feed the troops at all times!

Tonight we had the Mexican Mild Chilli Beef & Bean prepared two ways. Mexican Quesadillas for the kids and baked Whole Sweet Potatoes with Beef & Beans for hubby and I.

MEXICAN QUESADILLAS

INGREDIENTS

1 x packet of Marathon Chef Direct con Carne

4 x Wholemeal wraps (two per person)

Grated cheese (we used pizza cheese for extra stretch!)

Sour cream & avocado to serve

METHOD

1. Sprinkle grated cheese on top of one wrap.

2. Top with Marathon Chef Direct con Carne.

3. Sprinkle more cheese over con Carne mixture.

4. Top with another wrap.

5. Heat a small amount of oil in a non stick fry pan, add Quesadilla, gently heating until golden brown then flip and cook the other side. Quesadilla is cooked when wrap is golden brown and cheese is melted.

7. Using a pizza cutter or sharp knife, cut into 4 slices.

9. Serve with sour cream and avocado.

Not to sure about the thought of meat on the shelf?! Well we feed our kids baby food don’t we? Baby food like beef casserole and apricot chicken that’s stored and sold off the …. shelf!

Chef Direct has been designed to be stored in the pantry yet, wait for it… there are no preservatives and no artificial colours or flavours! Just all natural, flavorsome ingredients that have been made fresh then snapped shut to keep everything super fresh without the need for refrigeration or freezing! Genius!

WHOLE SWEET POTATOES WITH BEEF & BEANS

INGREDIENTS

1 x packet of Marathon Chef Direct con Carne

2 x medium sized sweet potatoes

Grated cheese

Sour cream to serve

METHOD

1. Heat oven to 200 degrees celsius.

2. Place sweet potatoes on an oven tray and bake whole for 45mins until tender, oozing sweet sticky brown  (no need to pierce the skin).

3. Remove potatoes from the oven and leave to rest for a couple of minutes.

4. Place Marathon Chef Direct con Carne in a microwave safe bowl and heat on high for 3-4 mins.

5. Meanwhile, take a sharp knife and slice the sweet potatoe in half.

6. Top with the con Carne mix, cheese and sour cream.

The con Carne had a really nice home made taste and would be absolutely perfect for a travelling/camping family as storage is so easy due to there being no need to refrigerate, and, as mentioned above, they are perfect for busy mamas to keep in the pantry as a grab and go week night meal option.
