What could be a more perfect, easy weekday (can’t-be-bothered-creating-a-masterpiece) meal than a good old fashioned baked potato?!
Thanks to our Mama loves to share friend Nicky for sharing this dinner idea and reminding us of not only of how much we love a healthy potato stacked high with yummy toppings, but also how super easy a meal it is to prepare for the whole family. Especially when you have the middle of the week CBF’S!
Baked potatos are an exceptionally healthy, low calorie, high fiber food that can help give protection against cardiovascular disease and cancer. What a little trooper the ‘tato’ is!
Another awesome feature of this meal is that the kids absolutely loved choosing and popping on their own toppings. The baked potato gets a big tick from all of us!
INGREDIENTS (this is just a guide, you can really add anything you like on top)
Potatoes with skin (as many as you think will serve the family, we had two big ones each, the kids had one-and-a-half each)
6 x pieces of bacon
2 x spring onions
1 x bag of coleslaw (or make your own, dressing is also an option)
2 x handfuls of grated cheese
Handful of chives
Small tub of sour cream
1. Pre-heat oven to 200 degrees celsius. Wrap potatoes in foil and stab each with a fork a few times. Place in the oven for about 30 – 40 minutes or until soft.
2. Take out of the oven, remove foil, cut open and put a knob of butter on each, then go for it!
We love to put cheese after the butter, followed by coleslaw, bacon, spring onions, sour cream and finally sprinkle with chives.
